These settings are specific to use of the Shipping module:

Shipment Status: Used to define the various stages of an shipment to be used for look-up and reporting.  Right-click to add a new status.  Status can automatically close in conjunction with the UPS or FedEx interface when a shipments delivery details are downloaded.

Shipping Methods: Used to select which standard carrier methods (from FedEx, UPS, USPS) are available for shipments.  A default method can be selected for each carrier.
